when you knock someone out be sure to shake their body by pressing the x button on the soilder with no weapons selected. they may drop ammo or dog tags which unlock special features.

you can hold up soilders to get their dog tags or just to see them scared all you have to do is sneak up behind them and auto aim your gun at them depending on your weapon and where you aim they might drop something. if they arnt scared so easily you can shoot past their ear or face in general and they will usually drop what they've got in fear. and it is sometimes the only way to get certian dog tags. hope this helps.
